Ingredients
10 Tablespoons cooked and mashed orange sweet potato
2 1/2 cups Almond Flour
3/4 cup Brown Rice Flour
1/4 cup Oat Flour
1 cup Tapioca Flour
5 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cup coconut milk
3/4 cup maple syrup
4 teaspoons vanilla extract
10-12 Tablespoons vegan chocolate chips
Instructions
1. Cook a whole sweet potato (we cut ours into pieces and boil) until it's soft enough to mash.
2. Pre-heat the oven to 350 °F (177 °C)
3. In a large mixing bowl combine all your dry ingredients, whisk well until smooth
4. Measure 10 Tablespoons of the mashed sweet potato and add to a high speed blender.Follow with all liquid ingredients (coconut milk, maple syrup, vanilla extract) blend together until smooth and creamy
5. Pour the liquid ingredients into the mixing bowl with the dry ingredients. Stir until smooth and no lumps remain. Then stir in the chocolate chips. Don't over mix.
6. Fill muffin liners to the top with the blended mixture
7. Bake for 20-23 minutes until a tooth pick is clean from the middle of the muffin.
8. Let cool and enjoy!
